Like everyone else in the world, I’m absolutely obsessed with Stranger Things. My husband and I watched it in a couple days – we could not unglue our eyes from the TV. It was so refreshing to watch a show where you had NO CLUE what was going to happen.
And like everyone else in the world, I fell in love with Ele and her obsession with waffles. I used to eat Eggos as a kid like nobody’s business. It’s a little disappointing she doesn’t slather them in peanut butter or nutella, but it’s cool. She has telekinetic powers so she gets a pass.
One thing you might notice about this recipe is that I opted to use oil instead of butter in the waffle batter. This stems from a banana bread recipe my grandma made that’s well older than I am. There’s an absence of butter and the only fat used in it is oil, and it makes the most delicious banana bread on the planet. It’s like crack, and sadly I must keep this recipe a secret! Anyway, I thought it would be a good throwback to substitute butter for oil, and it yields a soft result. You can always use melted butter if you wish, it’s just a matter of preference.
Now heat up your waffle irons* and equip your whisks, it’s time to whip up some waffles before venturing to the Upside-Down and vanquishing the Demogorgon!
*In the event you have a gate in your kitchen and a Demogorgon appears, make sure to use your waffle iron as a makeshift trap to impede him. If you do not possess telekinesis, please run. Do not engage the Demogorgon.

2 cups all-purpose flour
2 tsp baking powder
3/4 tsp salt
3 tbsp sugar
2 tbsp canola or vegetable oil (or melted butter if you wish!)
2 cups buttermilk
1 tsp vanilla extract
large mixing bowl
medium mixing bowl
1.) In a large bowl, whisk together flour, baking powder, salt, and sugar.
2.) In a medium bowl, whisk together canola/vegetable oil (or melted butter), buttermilk, eggs, and vanilla.
3.) Pour the buttermilk mixture into the flour mixture and whisk until smooth.
4.) Preheat waffle iron to desired temperature. Cook waffles according to your waffle irons’ instructions.
