By request, I present to you the latest patch for the World Of Warcraft recipe archive: Golden Fish Sticks.* These crispy little strips of Golden Darter are coated in egg and Panko (Japanese breadcrumbs) and are baked to perfection. They are so easy to execute any Journeyman level cook could craft them!

These Golden Fish Sticks aren’t like your typical deep-fried, dripping with grease fish sticks. These are baked using high temperature paired with a preheated, oiled baking sheet to ensure crispiness without making you feel like you just noshed on a Disgusting Oozling.
The secret to making your fish flavorful: season both your breadcrumbs AND your eggs. More often than not if you just season your breadcrumbs the outcome is bland and boring. I used cajun seasoning in both my eggs and breadcrumbs, specifically JOE HORN’S BAYOU 87 – Tastes so good, you’ll want to call somebody! I picked this little treasure up in New Orleans for obvious reasons, and it’s surprisingly a great seasoning! It has a healthy amount of salt which brings out all the other spices that are blended along with it. You’ll want to use a cajun seasoning with a good amount of salt, and if your seasoning lacks in the NaCl department you can always add a bit yourself to compensate.

1 lb fresh Golden Darter (or cod), cut into 1″ wide strips
2 tbsp cajun seasoning
2 cups Panko (Japanese bread crumbs)
olive oil for sheet pan
knife and board
sheet pan lined with foil
2 shallow bowls
1.) Line a sheet pan with foil and coat with a thin layer of oil, spreading it evenly using a paper towel. Place the pan on the top rack of your oven and preheat to 450ºF. This will warm up the sheet pan and help prevent the fish sticking and will crisp it up a bit more on the bottom.
2.) In a shallow bowl, whisk together the eggs and 1 tbsp cajun seasoning. In a separate bowl mix together the remaining cajun seasoning and Panko.
3.) Dip each piece of fish in egg, shake off the excess, and dredge in Panko. Shake off excess breadcrumbs, arrange on the preheated sheet pan and bake on the top rack for 10 minutes. Serve immediately.
